Edward: Blue. Definitely. Sort of melancholy, but at the same time it is bright and beautiful.
Bella: Yellow. She has a glow to her personality, I would say. But at the same time, out of place, in a way.
Jacob: Red. Fiery, but great and fierce. He's definitely red.
Renesmee: She's a little girl. She is pink :) Beautiful, bubbly, all that good stuff.

I also enjoyed Renate's answer for a couple of characters:
Alice: whatever color is in style since she is always up to date in fashion and beaty and stuff.
Esme: Pink because she is always cheerful and i think of pink as a cheerful color.
Carlisle: Yellow because he is usually mellow and calm and what not.
Emmett: Camoflague colored because he is strong and always ready for a fight.
Jacob: russet because that is his wolf color.
